About Crenn
Dominique Crenn opened Atelier Crenn, an ode to “poetic culinaria,” with her business partner Juan
Contreras in January 2011. The restaurant achieved its first Michelin Star that same year and garnered a
second the following year. In 2018, Atelier Crenn became the first female-led, US restaurant to receive
three Michelin Stars. Since then, Chef Crenn’s flagship restaurant has evolved, now telling the story of
California through food, highlighting local fish, seafood, and produce from its own regenerative farm in
Sonoma.
Main Role
The Sommelier is responsible for leading guests throughout their dining experience. They are the
authority on all aspects of beverage and steps of service in the restaurant. The Sommelier is able to assist
in every facet of service including, polishing glassware, running food, clearing tables or anything else that
a team mate might need. They also assist the Lead Sommelier in cellar management, inventory, and
leading weekly wine training.
Responsibilities:
? Always greet and welcome guests promptly in a warm and friendly manner to build rapport.
? Assist guests in wine selections and ensure beverage service standards are met.
? Upsell dessert wines, non-alcoholic beverages, supplements and take home selections.
? Facilitate communication between departments during service.
? Support Lead Sommelier providing ample and continuous beverage training and education for
the team.
? Maintain cellar, eurocave and the wine fridge organization and cleanliness.
? Maintain an accurate wine list, takeaways and storage locations.
? Assist Lead Sommelier with monthly inventory of both glassware and beverage.
? Assist lead sommelier with receiving, storing, and bining wine.
? Actively track and reduce loss through proper pour levels, minimizing waste and loss, alerting the
Lead Sommelier of corked/faulted wines, and dating bottles when opened to ensure optimal
window of drinking.
? Continuously taste, research and remain active in the industry.
? Assist the Lead Sommelier with the creation and production of Non-Alcoholic beverages.
? Take an active role in coaching and developing junior staff.
? Perform restaurant opening and closing duties, including POS terminal closing, tallying cash and
credit card statements, as well as gratuities.
? Be responsible for completing any side work duties not finished by other associates.
? Anticipate any unexpected guest needs and react promptly and tactfully.
? Alert management of repair and maintenance issues pertaining to the cellar, eurocaves/wine
fridges, beverage mise-en-place, etc.
? Attend training sessions and meetings when required.
? Work with fellow staff and managers to ensure that the restaurant achieves its full potential.
Qualities required:
? Minimum of 2 years experience as a sommelier in Michelin starred fine dining.
? Excellent food and beverage knowledge with a strong foundation in French wines and cuisine.
? Functional understanding of G Suite and Inventory systems.
? Leadership skills with strong commitment to sustainability and excellence.
? Desire and ability to teach and foster growth.
? Problem solving, multi-tasking and delegation.
? Initiative and follow through.
? Keen attention to detail.
