Job Summary:

The Senior Registered Dietitian will lead the dietetics and nutrition programs within the Food & Beverage Department at Miami University including overseeing the day-to-day operation of food preparation at the Culinary Support Center.

Duties/Physical Demands:

Responsibilities
• Plan meal programs including recipe/menu entry and maintenance, recipe testing and implementation, and driving new food products and ideas
• Oversee the day-to-day operation of food preparation at the Culinary Support Center
• Review all products as they come to Miami for specific allergens and ensure coding on all menus
• Update and maintain nutrition database
• Assist with dining accommodated students which may include meeting with the students, shopping for needed items and implementation of meals at dining facilities as necessary
• Promote nutrition and healthy eating to Miami’s students
• Serve as a point of contact for suspected foodborne illness procedures and serve as a resource on food safety and sanitation for the Food & Beverage department
• Supervise Miami’s Registered Licensed Dietitian including training, coaching, and all Supervisor duties. Additionally, provide assistance to interns and student workers as necessary.
• Remain abreast of the latest research in nutritional and food sciences in order to make informed recommendations and decisions for Dietetics

Minimum Qualifications:

• 5 or more years of experience in a Dietitian related food services role with experience in a leadership position
• A passing score on the Registration Examination for Dietitians is required
• A license to practice dietetics in the State of Ohio.
• ServSafe certification or ability and willingness to complete the certification within six months of employment at Miami
• The Commission on Dietetic Registration of the Academy of Nutrition and Dietetics requires that students complete a college/university educational program in dietetics and/or nutrition that is accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) of the Academy of Nutrition and Dietetics followed by an accredited Dietetic Internship if not a coordinated program. Educational programs may be in one of the following categories:
o Accredited Coordinated Program in Dietetics
o Accredited Didactic Program plus accredited Dietetic Internship

Desired Qualifications:

• Foodservice management
• Experience in Allergen control
• Experience with Cbord Food Service Suites and NetNutrition
• Previous experience managing students and precepting Dietetic Interns
