What You'll Do:
As a Lead Baker, you will carry out our Mission of Love by developing bakery recipe formulas and preparing various types and styles of foods using all manner of bakery food service preparation equipment, as well as specialize in the use of technically advanced baking and/or cook/chill food production methods.
Our Lead Baker is responsible for the following:
- Under direction of the Production Manager, develops, tests and analyzes bakery recipe formulas for residents/customers to develop recipes while staying up to date with current trends.
- Directs and leads in the production of bakery foods from preprinted developed recipes following the requirements listed on food production sheets and using both Cook/Chill and Conventional baking, cooking equipment while maintaining consistency and recipe accuracy.
- Follows Hazard Analysis Critical Control Points (HACCP) guideline for the production of all food items, including completion of HACCP logs.
- Directs and assists in the cleaning and sanitizing of all bakery production equipment and assists with development of current cleaning lists for the bakeshop.
- Develop and implement training and development programs for bakery personnel.
- Coordinates bakery production with available equipment, including production software, to ensure efficient use of equipment and timely completion of food production processes.
- Portions and pans finished bakery products into designated pans, and chill product using appropriate procedures in Blast Chiller.
- Performs other tasks as assigned by supervision or Production Manager.
What You Have:
- Graduate of an accredited chef's school or college preferred.
- Four years or more of experience as a baker preferred.
- Ability to read, understand, and follow standardized recipes, production sheets, recipe mathematics and therapeutic diets spread.
- Experience in leading production personnel.
