Proof Bread is looking for several bakery apprentices to join our small, efficient team. We are growing to three locations within 2023. Our headquarters is located in Downtown Mesa at 125 W Main St, Mesa, AZ 85201. Our second location in the Phoenix "Sheaborhood" is located at 3110 E Shea Blvd, Phoenix, AZ 85028. Lastly, we are elated to eventually be a part of the ECO-Phoenix family in Downtown Phoenix located at 301 W Roosevelt St, Suite 1, Phoenix, AZ 85003.
We are a small scale artisan bakery that specializes in naturally leavened breads and pastries using locally or regionally sourced flour. Our mission is to revive our local supply chains, grain economies, and educate our community about real food. We are family owned and operated. We are a farmer's market based business who started in our home garage, recently transitioned to a downtown Mesa retail location, and now expanding to Phoenix to incorporate a warehouse and second retail location.

Role Description :
This is an entry-level baking position on the Proof Production team.
A Bakery Apprentice I is a hard-working and reliable teammate who is eager to support, learn, and develop new skills in the world of sourdough baking. An Apprentice I actively works to close knowledge gaps, own and learn from their mistakes and seeks feedback from team members and management.
A Bakery Apprentice I will spend the first six weeks of training rotating in different areas of the business before placement. This will include areas of mixing, lamination, baking, table work, customer service, markets, food prep and logistics.

Duties include, but not limited to:
- Perform a supportive role to corresponding Bakery Apprentice 2 & 3, Bakers and Leads
- including but not limited to: thoroughly cleaning equipment, transferring and labeling products, interpreting recipes, folding dough, scoring loaves, fetching supplies, laminating pastry, shaping bread, clearing pathways, preparing inclusions, preparing fillings, transporting flour
- Work in an organized, cleanly, and helpful manner
- Understand the business and consider the needs of the next shift
- Work quickly towards and maintain a pace set by Captains, Leads, and Bakers
- Shape 100s of breads and pastries in an attentive but efficient manner
- Take direct instruction or feedback from Captains, Leads and Bakers and make adjustments accordingly
- Work to understand workload balancing, time management, and team pacing
- Demonstrate ability to thoroughly and carefully clean and maintain all stations and equipment
- Wash dishes and sheet trays
- Wipe, sweep, sanitize, and mop surfaces
- Demonstrate basic kitchen safety
- Customer service and logistics
- Develop bakery skills and make progress in Bakery Apprentice 2 proficiencies
- Identify and report issues proactively to Bakery Captains, Bakers, or Leads
Prerequisites and Requirements:
- Must have a high school diploma or GED equivalent
- Produce a valid ID and food handling certification
- Prior kitchen experience is a plus
- Must be able to stand for up to 8 hours
- Demonstrate proficiency computing basic mathematical proportions
- Maintain a positive attitude despite difficult working conditions (long hours, physical demands)
- Demonstrate efficient time management and general reliability
- Learn quickly, thoroughly, and demonstrate independence and critical thinking skills
- Demonstrate effective teamwork and communication skills
- Must be willing to work customer service or markets
- Must be able to reliably get to and from work
- Must be willing and able to work long shifts and stay until all tasks are complete
- Solve problems efficiently and ask questions when in doubt
Position Specifics :
- Full-time or part-time positions available
- Position hours are available Monday-Sunday, with a 4- to 5-day work week
- Compensation begins at $15 hourly (during training)
- Tips are shared amongst the production team based on hours worked
