Job Summary
Wolfgang Puck Catering is currently seeking a Complex Executive Chef with Fine Dining experience, High-Volume production skills, and Union experience to join our esteemed client, Sony Studios. In this exceptional role, you will be responsible for overseeing all culinary operations, including catering and cafes, for Sony Studios. As the Complex Executive Chef, your journey will involve strategic planning, menu creation, quality control, team leadership, and a steadfast commitment to safety and sanitation standards. Your creative expertise will be the driving force behind our bustling high-volume food service operations, delivering an unparalleled level of service that sets us apart.
- Be the culinary genius behind overseeing catering and events at a state-of-the-art catering space.
- Manage multiple employee dining cafes across Sony Studios, providing delicious and diverse culinary options for staff members.
- Lead the catering services for all studios within Sony, ensuring high-quality and seamless execution for all events and productions.
Key Responsibilities:
- Develop and curate regular and customized menus in line with Sony Studios' preferences and expectations.
- Ensure flawless menu execution by adhering to standardized recipes, portioning, and presentation standards.
- Continuously assess meal quality through tastings.
- Lead and mentor kitchen staff, providing training in food preparation, equipment operation, food safety, and sanitation practices.
- Establish and maintain rigorous cleaning and maintenance schedules for equipment, storage, and work areas, monitoring staff compliance.
- Manage food and non-food supply inventory, ensuring adherence to established guidelines and product availability.
- Make informed decisions regarding the utilization of leftover food products, following Company guidelines.
- Ensure strict compliance with federal, state, and local health and sanitation regulations, along with departmental procedures, through regular audits.
- Enforce facility, department, and Company safety policies and procedures, including incident reporting.
- Actively participate in departmental meetings, staff development initiatives, and professional programs as required.
Preferred Qualifications:
- Associate's degree or equivalent experience.
- A minimum of 5 years of progressive culinary/kitchen management experience, considering formal degree or training.
- Extensive catering experience, particularly with VIP clients, is highly advantageous.
- Demonstrated experience in high-volume, complex foodservice operations is essential.
- Proficiency in scratch kitchen fine dining batch cooking.
- Hands-on chef experience is mandatory.
- In-depth knowledge of food and catering trends, emphasizing quality, production, sanitation, food cost control, and presentation.
- Strong computer skills, including proficiency in Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and internet use.
- Willingness to actively engage in client satisfaction programs and activities.
- ServSafe certification is highly desirable.
