Function (Scope and Main Purpose of Job)

 

The Sous Chef is responsible for the supervision and coordination of activities in preparing and cooking foods.

Specific Responsibilities and Duties

  1. Develops and manages the food cost according to the budget.
  2. Implement programs and processes to reduce and control loss time injuries.
  3. Manages and schedules staffing levels to maintain budgeted level of employment and coverage to assure a positive gaming experience for guests to the Pittsburgh Live! Casino
  4. Developing staff, to include training, interviewing for hires, conducting disciplinary counseling and conducting performance evaluations.
  5. Cooks, carves meat, portion control, prepares new dishes, sauces and garnish.
  6. Review all kitchen activities, processes and promotional ideas with the Executive Chef.
  7. Monitor and adjust performance to local competition.
  8. Meet with departmental directors and managers as necessary.
  9. Other duties as assigned.

Job Requirements (skills, knowledge, and abilities) 

  1. Ability to analyze and interpret restaurant operational results.
  2. Ability to solve complex problems.
  3. Knowledge of sanitation laws and health regulations and applicable OSHA regulations.
  4. Ability to perform assigned duties under pressure.
  5. A variety of task and deadlines requires irregular work schedule.
  6. Ability to perform in an interruptive office environment.
  7. Accuracy in completing assigned duties in a timely manner.

Educational Requirements

  1. Five (5) to seven (7) years’ experience in restaurant management and supervision
  2. A four (4)-year degree in related fields or equivalent work experience.
  3. Must be able to obtain and maintain a valid gaming license as determined by the State Gaming Agency for the position.

  Physical Requirements

  1. Ability to work long hours.
  2. Ability to stand for long periods of times without sitting or leaning.
  3. Ability to handle multi-tasking heavy work-exerting up to 50 pounds of force occasionally, and up to 30 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects.
  4. Ability to work around variable temperatures.

Working Conditions

  1. 24/7 high energy casino with over 100,000 sq. ft of gaming and entertainment space and approximately 500 employees.
  2. Exposed to alcohol, cigarette and cigar smoke, bright lights, and loud noises.
  3. You will work in an environment where smoking is allowed.
