Job description

Daphne's is an Italian/American restaurant focused on seasonal cuisine opening in Bedstuy, Brooklyn in late March/early April.

The Chef de Cuisine is responsible for all daily BOH operations. This includes managerial and administrative responsibilities such as overseeing line cooks, budgeting, staffing, hiring, cost control and scheduling. The CDC is to uphold excellence of food quality and the maintenance of the cleanliness/sanitation of all areas of food service.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

Oversee all scheduling and weekly payroll within the department while maintaining the payroll budget.
Must be able to create and maintain a clean and organized back of house kitchen operation.
Responsible for upholding Health Department standards.
Oversee and supervise all kitchen staff.
Effectively implement & execute training of kitchen team members, continually updating and testing kitchen standards, cooking practices and new menus.
Ensure all stations are cleaned and broken down properly.
Review work schedules weekly to maintain operational efficiency and standards.

REQUIREMENTS:

2 + years’ experience as upper kitchen management in a New York City high volume/fine dining restaurant
Open Availability: Day, night and weekends are a must for this position
DOH Card is required
Ability to support prep / line / expo
Ability to create relevant seasonal specials
Experience ordering with NYC vendors
Able to be personable, maintain a friendly demeanor and be supportive to BOH, FOH and Mgmt
Experience with Italian Cuisine / Fresh Pasta is a plus
