Sous Chef Needed - High Volume, Upscale Italian Restaurant

ESSENTIAL DUTIES as SOUS CHEF
- Performs daily shift responsibilities while supervising all back of the house staff ensuring 100% guest satisfaction
- Monitor breaks and staffing
- Monitor 5-Star Standards
- Supervises food preparation, production and service in all areas of the kitchen and line.
- Conducts interviews, makes hire recommendations, completes new hire paperwork, trains, disciplines and makes termination recommendations for back of the house employees.
- Conducts performance reviews for back of the house employees.
- Supervises the cleanliness and sanitation of the kitchen, storage and surrounding areas.
- Maintains a professional and acceptable appearance at all times.
- Upholds a positive attitude that enforces a good working environment.
- Works as a team player; has a pleasant and helpful attitude toward guests and staff members to ensure guest satisfaction. Exemplifies the company's core values of honesty, integrity, respect, commitment and quality fanaticism.
- Strong kitchen and dining room experience with attention to the details of our authentic Italian cuisine, recipes and execution is required.
Ideal Sous Chef Candidates bring:
- At least 1+ years prior experience as a Sous Chef, Kitchen Manager or Supervisor required in a high-volume restaurant ($3.0+ million annual sales)
- Italian or Mediterranean Experience a BIG PLUS
- Culinary experience in an upscale casual or fine-dining restaurant
- Experinece training, coaching and managing a team of chefs
- Experience managing food costs, inventory and ordering per forecasted sales and current inventory
- Experience managing labor costs and scheduling chefs
- Experience maintaining high sanitation and safety standards
