Job description

John Resnick and Eric Bost, of Michelin-starred Jeune et Jolie and Campfire in Carlsbad, CA, are partnering on two new North County concepts anticipated to debut in Summer, 2024. This ambitious project will feature two restaurants under one roof: Wildland and Lilo, occupying a 10,000 square-foot former garage space situated just to the south of the Buena Vista Lagoon Ecological Reserve in Carlsbad Village, a quintessential California surf town located 30 miles north of San Diego.

Wildland will be a rustic, restaurant and bakery open all day, reinterpreting Old World traditions in a vibrant and soulful California context. Adjacent to the reserve, the name is both a reference to the balance between man and nature and the connection between the surrounding landscape and the native products and flavors that will be reflected in its menus.

The culinary offerings will be anchored by an in-house bakery, local produce, fresh pastas, and a centerpiece rotisserie and wood-fired pizza oven. Wildland’s casual, no reservation all-day ethos will cater to ever-changing schedules and whims, meeting the people of our community where they are.

Wildland's more refined counterpart, Lilo, brings a fine dining perspective to the project. Planned for the 2,000 square-foot east corner of the space, Lilo will be an intimate, standalone 22-seat chef’s table experience featuring a coastal and seasonal multi-course tasting menu. “Lilo” refers to a friendship that can lay dormant for years, only to pick back up instantly, as if no time had passed since you last saw each other. Lilo will be a restaurant to celebrate relationships, and rekindle connection.

Wildland and Lilo represent the latest efforts of Resnick and Bost to bring dynamic, delicious, and welcoming hospitality projects to Carlsbad, and, along with Campfire and Jeune et Jolie right down the street, offer distinct and unique culinary experiences to the thriving cultural landscape of North County San Diego.”

We are really, really excited to bring these restaurants to our community, and even though we are still a ways out from our opening in Summer of ’24, we are starting to have conversations with potential leaders for both Wildland and Lilo. These are very ambitious projects, and will require many talented people who share in the vision of creating delicious and hospitable experiences for our guests, taking great care of our employees, and doing something that we believe is both impactful and important: ensuring that the time every person spends with us, is time well-spent.
