Kitchen Manager
THE KITCHEN MANAGER IS THE TOP MANAGER IN THE KITCHEN AND IS RESPONSIBLE FOR ALL DAY TO DAY OPERATIONS. WITH ASSISTANCE FROM THE COOK LEAD, THE KITCHEN MANAGER WILL PERFORM CORRECTIVE ACTIONS, EMPLOYEE EVALUATIONS, AND OTHER METHODS OF EMPLOYEE COACHING AND DEVELOPMENT. THROUGH DELEGATION AND FOLLOW UP, THEY WILL ENSURE THAT THE COOK LEAD IS COMPLETING RESPONSIBILITIES AND RUNNING THE OPERATION EFFECTIVELY.
Responsibilities:
- maintain set budget
- responsible for all aspects of operations
- approve all schedules based off budget
- ordering/receiving and managing of product
- conduct weekly inventory
- menu creation (work with owner on weekly preset menu)
- maintain weekly and daily cleaning of premise
- ensure proper sanitation through follow up, observations, and checklist
- ensure respectful communication between all staff
- employee evaluations
- employee corrective action
- maintain policies and procedures
- conduct regular meetings with junior management
- ensure prep list is organized and prep is ready when needed
- ensure quality of product received
- ensure quality of product to guests
- direct supervisor to BOH staff
- Creating and maintaining SOPs for position
Skills and Experience:
- Strong organizational skill
- Ability to lift 80 pounds
- Ability to stand for up to 8 hours
- Vision for the prep execution flow, to ensure completion of all required tasks
- Service execution
- Menu & recipe creation
- Strong attention to recipe procedure & food safety procedures
- Strong prep cooking & knife skills
- Food handler’s card
- Reliable transportation
- Current driver’s license & clean driving record
- 1-3 year management experience required
- ServSafe certified
