The Blue Marlin Fish House and Oleta River Outdoors in Oleta River State Park location in North Miami Beach, FL is looking for one kitchen manager to join our 36 person strong team. We are located at 2500 Ne 163 St. Our ideal candidate is attentive, motivated, and reliable.

To ensure high standards of service, all food and beverage are prepared on site according to tested recipes. Quality food, service and atmosphere - every time.
We are looking for individuals with a minimum of 2-4 years experience as a cook in a leadership/manager role.
Candidates must show responsibility, accountability, working knowledge of back of house administration, team development, a high standard of food & beverage knowledge, and financial management (food cost).
TYPICAL DUTIES
- Uphold and execute all F&B standards and policies set by our Brand.
- Maintain the established service and product standards for F&B operations.
- Be flexible with their schedule to accommodate the business needs of the day.
- Participate in promotional and off-premise catering events.
- Maintain a high level of food quality.
- Develop production specifications,food presentations, and cooking methods pertinent to menu production.
- Maintain/ execute proper prep lists and par levels.
- Establish and maintain cohesive communications with all employees.
- Assist with inventory as needed.
- Properly label, date, and store all prepared food as well as raw ingredients and food orders. Maintain a clean and organized work area.
- Recognize fluctuations in volume of business, and maintain station accordingly.
- Maintain a clean and presentable uniform/appearance.
- Effectively train and supervise all back-of-house employees on how to properly prepare, portion, garnish, and store food items.
- Supervising the opening and closing of the restaurant.
- Creating and posting back-of-house employees schedules.
- Ensuring completion of payroll template and reviewing payroll register.
- Ensuring proper handling of employee onboarding and off boarding.
- Verifying and uploading F&B inventory.
- Ensuring completion of line checks and checklists.
JOB QUALIFICATIONS
- High School Diploma. College and/ or Restaurant and Hospitality training.
- Must have a minimum of 2 years experience in a restaurant management role; preferably in a restaurant that also provides catering services.
- Demonstrated leadership skills, including coaching, directing and motivating a team.
- Strong culinary technique with commitment to continued culinary development.
- Record of maintaining high standards in restaurant cleanliness, sanitation, food quality and guest satisfaction.
- Computer literate and proficient in Microsoft Office.
- Excellent written and verbal communication with a positive and outgoing personality
- Must enjoy and be able to succeed in a fast-paced and high stress work environment
- Ability to work a flexible schedule based on F&B needs.
- Ability to work with other managers in a collaborative team effort.
