Job description

DUTIES AND RESPONSIBILITIES:

  1. Prepare and assemble sushi dishes according to established recipes and presentation standards; controls food usage to minimize waste.
  2. Ensure the quality and freshness of all ingredients used in sushi preparation.
  3. Maintain a clean and organized work area, including proper storage and rotation of ingredients.
  4. Collaborate with the kitchen team to ensure efficient food production and timely service.
  5. Regularly inspect and maintain sushi knives, tools, and equipment to ensure they are in proper working condition.
  6. Adhere to all food safety and sanitation guidelines during food preparation and handling.
  7. Stay updated on industry trends and new sushi techniques to continuously improve skills and knowledge.
  8. Provide excellent customer service by answering questions, taking special requests, and ensuring customer satisfaction.
  9. Assist in menu development and innovation by suggesting new sushi dishes and flavors.
  10. Advises supervisor of low inventory items; assists in receiving items and taking inventory as required.
  11. Maintains supplies of equipment, (trays, china, cutlery, and condiments), for service at the station areas.
  12. Aids in Mis en place and cooking preparation.
  13. Attends the pre-meal briefing sessions.
  14. Safe and proper care, preparation, storage and rotation of food items.
  15. Knowledge of safe and sanitary holding temperatures and procedures.
  16. Assists in other areas of the kitchen as needed.

QUALIFICATIONS:

Essential:                  

  1. Excellent knife skills and proficiency in various sushi techniques, such as cutting, slicing, rolling, and shaping sushi.
  2. Strong knowledge of different types of fish, seafood, and other sushi ingredients, including their characteristics and seasonality.
  3. Ability to create visually appealing and well-presented sushi dishes that showcase creativity and attention to detail.
  4. Effective time management skills to ensure timely food preparation and service.
  5. Attention to detail and a commitment to maintaining high standards of quality and consistency in sushi preparation.
  6. Ability to work well under pressure in a fast-paced kitchen environment.
  7. Strong communication and interpersonal skills to interact with customers, kitchen/Service staff, and management.
  8. Knowledge of food safety and sanitation regulations, including proper handling and storage of raw fish and seafood.
  9. Flexibility to work evenings, weekends, and holidays as required

Desirable:                  

Essential skills:                     

  1. Proven experience as a sushi chef or in a similar role, preferably in a high-volume restaurant.
  2. In-depth knowledge of Japanese cuisine, sushi history, and sushi culture.
  3. Familiarity with different sushi styles, such as nigiri, maki, sashimi, Ceviche and temaki.
  4. Ability to handle and prepare raw fish and seafood safely and responsibly.
  5. HACCP certification or food safety training is a plus.
  6. Physical stamina and dexterity to stand for long periods, lift heavy objects, and perform repetitive tasks.
  7. Fluent in English for guest and staff communication.
