Vacancy description
Duties will include:
- Breaking down carcass meat into primal cuts
- Bone, roll, dice, slice meat
- Produce orders to customer specifications
- Meet time deadlines
- Make a variety of sausages and other value-added products
- Maintain high standards of food hygiene and personal cleanliness
- Keeping the butcher department clean and tidy during operational hour

Training to be provided
The final certification will be for L2 Butchery.
The apprentice will learn:
- Knife skills - including cutting, boning, trimming and mincing of meat
- Health and safety practices, food safety and hygiene and key legislation
- Using butchery tools and machinery – including mincing, sausage making, bacon curing, vacuum packing
- Business profitability, maximising productivity, efficiency and customer care
- Team work and customer care skills
- Specialist retail shop or processing plant butchery skills
Qualifications Awarded
- Butchery Level 2 Apprenticeship Certificate
- Level 2 award in food safety
- Level 2 award in health and safety
- Level 2 award in knife skills
- Level 1 in maths and English (if applicable)
The apprenticeship is completed in partnership with Plumpton College’s highly regarded Butchery Apprenticeship Department, where the successful applicants will embark on a Level 2 Butchery Apprenticeship, lasting between 12 and 18 months. The course includes all aspects of modern butchery together with additional qualifications in food hygiene and health and safety. The course concludes with an assessment in skills and knowledge before the apprenticeship qualification is awarded.
