We are seeking a passionate Head Chef to operate within Food & Beverage, to oversee daily F&B operations, and to lead in the production and delivery of our entire F&B offering at BikePark Wales. There will be a focus on quality, local produce and creating visually appealing dishes/displays. The right candidate will have a keen eye for ensuring food quality and H&S procedures are followed properly.

This is an exciting time to be joining with multiple units and services throughout the day, providing a fast-paced and varied day. There will be opportunity to grow within the business as expansion plans are underway.

Reporting through to the Operations Manager, the key roles for the Head Chef will be focusing on the quality and consistency of food output, adhering to and recording everything required within our HACCP and stock control/ordering.

The successful candidate will have a background in busy, casual dining kitchens and most importantly be able to show a passion for producing great food.

The ideal candidate will be a fun, engaging individual who has an interest in mountain biking and/or the outdoors. You have to be willing to get stuck into all aspects of a busy F&B environment.

To be successful in this role, you should be able to manage our F&B staff and guide them to deliver quality food & service.

Duties/Responsibilities:

Direct all kitchen operations, including food preparation, cooking, and cleaning

Maintain kitchen equipment as needed

Supervise chefs and cooks, and FOH team

Achieve and Maintain a minimum score of 4 out of 5 for score on the doors

Resolve issues as they arise to ensure the continuation of food service

Maintain control of the kitchen to ensure efficiency

Plan menus and set prices based on the availability of ingredients

Make sure that all staff adhere to food safety and hygiene regulations to ensure a clean and sanitary kitchen

Inspect raw and cooked food to guarantee quality

Direct monthly inventory

Maintain vender relationships

Preparation of food and cooking of dishes in line with agreed specifications

Stock control and ordering

Maintaining order within dry store and refrigerated areas, including date & allergen labelling

Ensuring a high standard of cleaning for the entire F&B area

Maintaining daily and weekly records as specified in our HACCP

Work with Operations Manager on development of menus to ensure they are seasonal, relevant, and appropriately costed

Maintaining allergen information alongside changing menus and suppliers

Training and developing employees

Carry out any other reasonable duties within the overall function of the job

Key Attributes:

Previous experience as a Head Chef or a couple of years as a Sous Chef within a high volume food environment

Minimum level 3 food hygiene trained

Passion for producing great food

Impeccable food hygiene with a good understanding of HACCP

Hard working and reliable

Great team working skills

Excellent written and verbal communication skills, with a keen attention to detail

Understanding of stock, pricing and its movement

Desirable attributes would include:

Background in baked goods
Barista experience
Point of sale experience
Fluent Welsh speaker
