The Balmoral is located at Edinburgh’s most prestigious address, No. 1 Princes Street, where the Old Town stops and the New Town begins. Our hotel’s majestic clock defines the city’s skyline and since the day we opened in 1902 it has run three minutes fast to ensure our guests will never miss their train.
The Position
Join Head Sommelier Callum McCann and Emma Lonie, Restaurant Manager in our fine dining, 4 AA Rosette Number One restaurant.
Like our award-winning team, you should be passionate about fine wine and creative, modern cooking that is delivered with real personality and truly world-class hospitality.
Previous sommelier experience in a fine dining restaurant or within a 5-star property is preferable. Number One has an extensive wine list and cellar; 350+ wines are now on full display in a bespoke cellar at the front of the restaurant. Wine offerings include over 20 wines by the glass, bottles from more than 16 countries, and older vintages through to current releases.
You will be responsible for recommending wines to guests that complement our seasonal 7-course menu. We will expect a comprehensive product knowledge of both our wine and bar list and menu whilst ensuring the highest standards of service. We will provide extensive learning and development opportunities tailored to you.
We work 5 days per week, dinner service only with 2 days off together. We believe in a true work/life balance so there'll be no split shifts.
Base salary £23,000 with qualified estimate of £7,000 in discretionary service charge.
