Job description
1. Food PreparationPreparing any food required to produce the dishes required this may include but not exclusive to ;a) Meat Preparation - Defrosting, portioning, cutting up, forming and coating, traying up in containers, mixing, mincing, including setting up equipment and wiping down work surfaces.b) Fish Preparation - General preparation - defrosting, skinning, filleting,coating and traying.c) Pastry and sweets - General preparation - prepare equipment, weighing,mixing, rolling, operating machines, filling containers and adding fillings.d) Vegetable Preparation - Manual - washing, cleaning, peeling, selecting,dicing and placing in cooking vessel.e) Miscellaneous - grating cheese, making breadcrumbs, preparing sauces and garnishes.f) Cleaning - The post holder should work on a clean as you go basis. Theymust clean the area they have been working in after they have finished2. Cooking and Servicea) Cooking - Cooking food on cooking equipment including loading andunloading on and off cooking equipment. Tending food on stoves, beating,mixing, blending, checking, testing and stirring.b) Salads and Sandwiches - Prepare and make salads, sandwiches & preparefillings for sandwichesc) Serving food - Fill containers and prepare for distribution to the wards. Ensure that sufficient food is prepared for each meal service using figures provided. Respond to out of mealtime requests for patient meals and diets. Serve the food if requiredd) Check food for correct temperature before service. And record on the trusts HACCP sheets. Take appropriate action is food failse) Check the quality of food to comply with the Trusts standards. Takeappropriate action if the food fails3. Dietary KnowledgeHave knowledge of special therapeutic diets and be able to respond to a request for the provision of a special diet at short notice.4. HygieneObserve good hygiene practises and keep up to date with current food hygiene and training legislation. Ensure the documentation for the trusts HCCP policy is completed, and any fails rectified and retested5. Health & SafetyHave a good knowledge of all health and safety procedures and demonstrate compliance by working alongside colleagues in a safe manner.6 TrainingAssist with the induction of new staff by demonstrating duties.7. Daily Work PlanOrganise and plan his/her own daily work routine and work to mealtimedeadlines. Core 5 Level 38. GeneralKeep work area tidy by disposing of packaging immediately it is no longer required.Report any faulty equipment to a senior member of staff.Report poor quality products to a senior member of staff.Work with other colleagues as a team member in order to meet the standard of service required by the Trust.Act up to a higher grade as and when necessary.
