Job description
OVERALL RESPONSIBLE FOR AND TO
Responsible for his team and the junior kitchen staff .
Responsible to Head chef and management staff.
Duties
Managing her kitchen team on a day-to-day basis in conjunction with the head chef to deliver top quality Dim Sum and to be responsible for any special requests, especially with large banqueting and events.
1. Arrive for duty in accordance with the departmental rota and correctly dressed.
2. Discuss the daily business requirements with the head chef and second chef, including any special requests for special dim sum product and help to allocate tasks accordingly.
3. To ensure that all the required equipment, supplies and resources are to hand and in good working order, report any problem to the head chef.
4. To prepare raw material and hand made dim sum for daily business demand and ensure the presentation of the dim sum product at high standard and do not fall below that which is expected within the chain.
5. To be responsible for maintaining the highest standards of hygiene in Dim Sum section in accordance with the legal and company requirements and to report any incident to head chef without delay
6. To prepare requests for supplies prior to running out of raw material and fruit garnish for the Dim Sum department and to ensure that those requests are passed to the second chef and to ensure that deliveries are received and stored appropriately.
7. To be responsible for the supervision and training of all junior kitchen staff allocated to her department.
8. To attend any meeting and training sessions as requested by senior management.
9. To work with the head chef and other senior chefs in the kitchen to develop new dim sum together with recipes which should be recorded at the end.
General
1. To carry out any reasonable request made by the head chef or a member of senior management.
2. To be fully conversant with all company procedures as outlined in the staff handbook, and conditions of employment
3. To be fully conversant with all legislation affecting working procedures and practises within the kitchen and in the company.
4. To be fully conversant with the operating standards and procedures within the department.
