We are recruiting a passionate, experienced Pastry Sous Chef to join an established team at the Bedruthan Hotel pushing our food offer to the next level. We offer an engaging, structured kitchen environment that drives creativity and development. This role will support the Head of Pastry with the running of the section and take charge on their days off.
Our menus and creations are inspired by the seasons and our specialist Cornish growers, farmers and fisherman. This role will help provide the professional delivery of these menus.
You must be well presented, articulate and driven, and have a natural tendency to do everything to the best of your ability.
Key responsibilities include:
- Development of recipes, helping with seasonal menu writing and preparing high-quality dishes
- You should be able to delegate tasks to kitchen staff to ensure the day runs smoothly and efficiently.
- Setting up the kitchen and the bakery each day
- Keeping to the work day schedule
- Ensure compliance with all health and safety regulations within the kitchen area
- Helping in building the knowledge of other team members and assist with there progression
- Ensure appealing plate presentation
- Slightly modify recipes to meet customers’ needs and requests
- Monitor food stock and place orders
- Check freshness of food and discard out-of-date items
- Experiment with recipes and suggest new ideas
- Deputising for the head chef where absent
We are looking for someone who:
- Demonstrates strong leadership skills
- Has the ability to remain calm and undertake various tasks
- Has excellent time management abilities
- Possess up-to-date knowledge of cooking techniques and recipes
- Can ensure dishes are prepared and presented in accordance with recipes
- Can manage and resolve any issues that may arise quickly and efficiently
Experience working in fast-paced kitchen with a focus on pastry is a requirement. A trial shift will be required prior to appointment.
