Job Title: Commi I - Food Production
Function: Food Production
Location: Lonavala

Primary Purpose

Is responsible for preparing and servicing all food items according to the production standards established by the organisation.

Major skills and accountabilities of position (4-6 major accountabilities)

1. Should have good knowledge on communication skills and organizational skills.

2. Should have knowledge on current culinary trends and food hygiene.

3. Should have attention to detail and be creative in presenting food.

4. Ability to multi-task and effective task management.

Duties and Responsibilities


1. Should prepares and services all food items according to standard operating procedures and ensures consistency in taste and presentation of all food items.

2. Should maintains daily mis-en-place and prepares certain food items for the following days duties.

3. Should has the ability and flexibility to work in all areas of the kitchen such as hot & cold line, Garde Manger and Banquet kitchen.

4. Should have the ability and flexibility to be scheduled for opening and closing shifts. Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
5. Should inspect and clean food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.

6. Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.

7. Monitors related equipment, reporting any problems or inconsistencies to the Sous Chef and performs other related duties as required.

1. Reports to CDP.
2. Interfaces strongly with employees.

Experience and qualifications required for the job
Should be a hotel management graduate or diploma holder. Should have minimum of 3 years of previous experience as a Commi II/III.
