Job Title: Sr. Food and Beverage Manager
Function: Food and beverage outlets
Location: Lonavala
Primary Purpose
Major skills and accountabilities of position
• must have managed fine dining and multi cuisine restaurant and Banquet operation
in high volume resort/hotel
• Should have thorough knowledge of customer engagement skills and delivering a
high level of customer service.
• Should be proficient in English, ability to manage people and developing people,
Accountable and resilient, Ability to work under pressure and Excellent grooming
standards.
• Should have high level of commercial awareness and sales capabilities.
• Should have excellent leadership, interpersonal skills and flexibility to respond to a
variety of work situations.
Roles and Responsibilities
• Participates in the development and preparation of the hotel strategic plan.
• Assesses, evaluates and ensures that long-term and short term goals of all Food &
Beverage operations are met.
• Directs and manages all food and beverage activities to maximize revenue, profitability and
quality goals by developing and executing marketing strategies, up-selling strategies,
controlling costs and by providing quality service and products to guests.
• Coordinate with the General Manager for the development and roll-out of the In-house
packages, promotions and activities.
• Conduct weekly audits in each of the Outlets to monitor service & quality and develop and
implement strategies to improve results.
• Monitor quality of service and give recommendations to be made to appropriate head of
outlet.
• Develop strategies in order to improve guest service, food production techniques and
efficiency.
• Achieves along with his Team Members the targeted food cost percentages
• Monitors discounts and non-chargables daily basis and any large deviations are accounted
for.
• Financial reports have been analyzed and corrective action and followup is taken on any
discrepancies.
• Preparation and pricing of food and beverage menus
• Maximizes employee productivity and morale within the department and consistently
maintain discipline within resort guidelines and regulations.
• Schedules employees in line with varying business levels in order to maximize productivity
and minimize payroll costs.
• Selects and recruits suitable employees for the department using prescribed set of policies
and procedures.
• Give appropriate skills training to team members in order to meet guests’ needs and
maintain standards.
• Identifies employees with potential for promotion and/ or transfer and makes appropriate
development plans for him/her.
• Conducts monthly departmental meetings with staff in order to review the monthly
achievements and areas for development.
• Establishes and maintains effective internal communications including daily meetings with
staff to ensure optimum team work and productivity.
• Understands and strictly adheres to the Rules & Regulations established in regards to
Resort policy on Fire, Hygiene and Health & Safety.
• Ensures that all potential and real hazards are reported and reduced immediately.
• Adheres to the hotel’s fire, emergency and first Aid procedures.
• Practices and enforces all emergency procedures to provide the security and safety of
guests and employees.
• Ensures that all employees have a complete understanding of and adhere to the Resort's
Employee rules and regulations.
• Work within all pre-set budgetary limits.
• Comply with all systems and procedures as laid down by the CMD and GM
Key success factors - how is the success in the position measured

Should be a Hotel Management Graduate or equivalent. Experience in 5 star luxury
hotel/resort with 8-10 years of experience.
