The role is based at Arnesse a historic manor house in the picturesque Uckermark district one and a half hours outside of Berlin. Restored and furnished in collaboration with artists designers and craftsmen the neogothic architecture houses 15 guest rooms a restaurant serving farmtotable cuisine a historical gymnasium and a plantfilled solarium for private dining and events. The property is set amid expansive gardens on a private lake and features an outdoor pool. Opening in summer 2024 it will provide an extraordinary experience as a countryside retreat for good food abundant nature and holistic health. Arnesse has been featured as a Financial Times 2024 hotel opening of the year and promises to become a unique addition to the Berlin regions hospitality landscape.
We are looking for an experienced Head Chef to join our team. The ideal candidate has experience working in dynamic environments and is motivated by their love for cooking highquality produce and the joy of seeing their team thrive. They will be responsible for planning and implementing all culinary moments at Arnesse creating a rustic yet elegant menu from local carefully selected ingredients. A wider understanding of current trends in global hospitality specifically those related to gastronomy will help set apart the successful candidate. Having a general overview of the current hospitality landscape taking inspiration from other industry leaders and creatively applying it to the role at Arnesse will be a distinct advantage. The Head Chef reports to the General Manager and the Executive Head Chef and plays a crucial role in maintaining the highest standards of hospitality that define Arnesse.
Tasks
- Ensure that our guests enjoy fresh and highquality food every day and that all processes in the kitchen are running smoothly.
- Plan the menu and daily specials ahead of time taking care to preorder ingredients.
- Monitor the purchasing and quality of produce as well as the overall compliance with hygiene regulations.
- Plan daily operations and workflows between service and kitchen in close cooperation with the bar the service and the frontofhouse team.
- Constantly work to improve processes.
- Maintenance of the kitchen and the associated premises in collaboration with your team.
- Recruit manage and schedule staff providing training and regular feedback.
- With the help of the GM monitor the use of goods and personnel costs.
- As part of the management department regularly attend meetings and provide insights that help the further development of the company.
Requirements
- At least 3 years of related work experience in a similar role.
- Completed training as a chef.
- Experience in a managerial position leading kitchen teams.
- Love for good food and fine cuisine.
- The ability to remain calm and maintain an overview even in stressful situations.
- Experience in cooking with seasonal local food especially vegetables.
- The talent to motivate and challenge staff and inspire teamwork.
- An openminded approach to innovation creativity and wider learning in related fields (including but not limited to food new techniques health and general wellness) is a plus.
- A business management mindset and practiced handling budget key figures to check and adjust the kitchen teams performance.
- Fluent in German and English both spoken and written to effectively communicate with guests and team members.
- Basic knowledge and competency in Microsoft and Excel and other relevant Software.
