Restaurant FLORENTINE MARBELLA - Stockholm based restaurant group Urban Italian Group is looking to hire chef de partie (cold section) for our first ever international restaurant, Florentine, soon to open in Marbella, Puente Romano. Who are we? Established in 2016, Urban Italian Group is Swedish leading Italian restaurant group, running homegrown fine casual lifestyle concepts throughout 8 trattorias in a family of more than 350 coworkers. In June 2024 we will be opening a 400 seats, 800 square meter, glamorous Trattoria in the heart of Puente Romano’s most prestigious development - A Forum. The restaurant will offer 2 floors, a patio, spectacular terrace with 360 bar, live entertainments and an open kitchen.

Chef de Partie - cold section

As a Chef De Partie - cold section, you are responsible for supporting the Head and Sous Chef in a busy kitchen delivering consistently high-quality food. Ensures the highest standards and consistent quality in the daily preparation and keeps up to date with the new products, recipes and preparation techniques.

Responsibilities:

• Prepare and ensure food quality, appearance, and consistency that adhere to restaurant’s recipes and standards.Complete assigned prep work duties in an efficient time frame.
• Supervise junior chefs and interns.
• Support the Head chef & Sous Chefs in the daily operation and work.
• Work together in a team-oriented environment to produce foods in a timely and orderly manner.
• Assist in ensuring the accuracy and quality of received food products and other supplies as required for daily operations.
• Keep all workstations and equipment as clean as possible at all times. Follow a cleaning schedule for designated equipment and storage areas.
• Daily feedback collection and reporting of issues as they arise.
• Observe compliance with the company’s policies and procedures, as well as governmental laws and regulations.
  

Qualification & Experience

• Culinary School Certificate
• Fluent in English Language
• Minimum 4 years of kitchen experience in a fine casual high volume dining concept, preferably Italian cuisine, 1 year plus experience of relevant position or equivalent
• Proven record of kitchen and staff management with good communication skills.
