Reporting to the Hospitality Manager or Site Manager, Cook lls prepare, cook, and bake food for residents, staff and visitors in a safe manner according to menus and applicable processes, including diet therapeutic items and special requests while adhering to standardized recipes, production sheets and special lists. Cook lls ensure all food preparation and handling functions provided by Food Services are completed in a safe and satisfactory manner, in accordance with established standards, processes and quantity controls.
Educational and other Qualifications
- Red Seal - Journeyman Cook
- BC EMPLOYEES: Food Safe 1 (post July 29, 2013) and Food Safe Level 2 or equivalent
- ALBERTA EMPLOYEES: Food Safety Certificate or equivalent
Knowledge, Skills, and Abilities
- Comfortable using a computer including email and internet
- Strong interpersonal skills with an ability to deal effectively with conflict in a diplomatic and professional manner
- Able to communicate in English both verbally and in writing so others can easily interpret and understand it fully

Work Experience
- Three to five years Institutional Cooking experience (other relevant experience may be considered)
- Experience working with the elderly
- Prepares, cooks, and bakes a wide range of dietary menu items according to established menu plans and identified portions
- Prepares diet and therapeutic items as required
- Ensures all food preparation and handling functions provided by Food Services are completed in a safe and satisfactory manner, in accordance with established standards, processes and quantity controls
- Consults with Dietitian for any nutritional requirements, menu changes and recipe development
- Responsible for ensuring all staffing and supplies are available for any catering functions
- Monitors special requests from clients/residents assuring all requests are considered
- Sets up and updates dining menu cards, diet requests and production sheets
- Prepares and updates staff schedule and adjusting flow sheets accordingly
- Adjusts staff schedule including vacations, stats, and other leaves (where applicable)
- Participates in the staff selection process, provides input on performance issues and the performance appraisal process
- Provides procurement of food supplies, chemicals, and small wares with the appropriate suppliers
- Processes invoices and purchase summaries for the Finance department including the month end report calculations
- Responsible for documenting and forwarding all supplier service and product quality concerns to the Purchasing department
- Responsible for documenting and forwarding all hospitality concerns to the appropriate manager
- Reports all food service equipment deficiencies to manager and/or Maintenance department
- Inspects food orders for meeting acceptability standards and initiates returns and refunds as appropriate
- Ensures food stuffs and leftovers are properly labelled and stored
- Ensures all temperature audits, cleaning audits and supply sheets are posted and maintained
- Responsible for meal rounds on units
- Responds to any food or meal concerns
- Provides assistance with feeding clients/residents during meal service (where applicable)
- Demonstrates dependability by reporting to work on time and as scheduled
- Maintains a high standard of cleanliness, keeping the work environment consistently tidy
- Adheres to all infection control practices and procedures
- Ensures an environment and resources which nurture spirituality
- Other related duties as assigned
